The problem for black is white doesn't mind reaching an objectively worse position, so even if you know theory that's not necessarily enough. White often get plenty of practical compensation in the form of an attack or initiative.
Yeah, this is often overlooked when choosing openings. Just because something is unsound does not make it bad in the right hands. If you are a strong attacking player who sees further than opponents then theoretial evaluations matter less than achieving a tactical position
