I think that's because in the "quick" disciplines like blitz and TT the form of the day has a much greater impact on the outcome than in slow chess (there too, of course).
Let's say you haven't slept well and your reaction time has increased by a few seconds. In slow chess this doesn't matter a lot, in blitz it can mean defeat.
My ratings are very volatile too ... in blitz I was up to 1260 at the end of last year, then I had some days with bad losing streaks which brought me down to 1130, a few days ago finally I managed to climb at least back over 1200 again :) In TT I was up to 1570 or so one week ago, then I dropped back to 1400, yesterday I was under 1300 for a short time, now about 1450 again ...
Some days I cannot seem to comprehend any problems in Tactics Trainer. It's like my brain is in a fog, ha, I mean more than usual. I usually do not train long when that happens.

My blitz chess and tactics trainer performance is really streaky. I'm prone to regularly swinging fifty to a hundred points, why is that? Does anyone else share this sentiment?
