What is 'Evergreen' game?

Could someone explain to me what is 'Evergreen' game in chess.?Thanks.

I think it is the game played in 1852 between Adolf Anderssen and Jean Dufresne.

This and the "Immortal Game" demonstrate Anderssen's amazing tactical abilities.

I’ve watched the video on the tutorials under mastery and openings and can’t see why taking the rook at around 13 minutes isn’t possible for black, I can see bishop c4 next move where if queen or bishop takes it end of game but this is easliy defended by moving the bishop to attack the white queen
