I have noticed that I can beat computer players who are 100-200 points higher than me, and we know that performance rating can be astronomically high compared to actual rating (like Gukesh at the moment), so it wouldn't be far fetched if someone like Carlsen could beat a 3000 rated engine with that disparity in mind.

AlphaZero's ELO rating was probably 3500. Sadly, no chess player has ever defeated Alphazero. However, the only human to defeat Alphago, the predecessor of Alphazero, was Lee Se-dol in a game of Go. In a 5-match showdown, he lost four times but managed to beat the computer at least once.
