Straight ahead is the most common alignment, of course, but many players choose to point them sideways.

Magnus point them sideways opposite and always like to fix that before game starts. I have a theory for this: When you play chess mostly on your computer, you watch the Knights sideways because this is their form on your console. Your eyes are use of this optical view and you convert it also to the OTB games. The authors who prepare pieces before the game starts they always put knights strait forward to face the opponent. Chess is a fight face to face, when your pieces look elsewhere than your enemy it's a little bit snob. Imagine to put the king sideways...with the cross looking left or right.
Horse eyes are on the sides of their heads.
They are not horses alone walking to the grass land! They are Knights! It suppose that they have a rider to point them to the correct direction. You can't attack your enemy in front of you by placing your horse sideways!!
I like your comment very much, as you been mentioned they are Knights and they have a rider this is a nice expression, I used to put them straight forward to face the opponent and guard more squares puting them a side will isolate them ,but on the long term plan you may have a reason for that , you may need to step ahead to the middle far a way from the pawns attack to proceed later .
Put them in a different direction everytime you move them.
This. Each time you move your queenside knight rotate it 90 degrees counter clockwise, and everytime you move your kingside knight rotate it 90 degrees clockwise.
I was told recently that one (or more) GM places the knights facing the king and keep them facing in that direction throughout the game so that they always know which is the king knight and which is the queen knight. Personally, I like to face them forward toward the enemy position.
It's also important to have the pawns facing correctly. I set them up so they are all centre-facing: a-d eyes right, e-h eyes left.

I saw a video of Magnus Carlsen doing this, so I guess there is some merit to it. Does anyone know what benefits may be provided by knowing which knight is which?
You must also place all your pieces slightly off centre on their squares when playing someone with OCD.
that's good.
ANd not just off center, but a different off center spot each time.
Indeed. And if you can get the board slightly off centre as well, so much the better. You should go for a look that the pieces have just fallen onto the board at random.

This is also how I model my playing style.
