You can change it more than once, just after the first time it has to be done with opening a ticket.
The ability to change it all the time is easy to abuse; not sure that is the reason it is limited but could be one of them.

You may contact chess.com telling them what you want to change your username too. You can find this by clicking support. So if you want it changed again, you can message chess.com through email.
And yes, that is likely one of the reasons. I know an app that lets you change it freely whenever and sometimes I can't tell if these certain people were someone else or not.
Like I said, you can just go to support and message them, so basically you can. They just want you to think you can't change it more than once due to what is stated when you try to change it a second time which is understandable. I mean, it's not like it is that bad, so I guess that's why they will change it for you if you message them.
You could just choose a username you are happy with to start with, then you don't need to change it!
That was untrue for me. XD
I had an immature little kid name and as I got older I wanted to change it.
As Martin said in post 2, you can change your name but the 2nd time is done with a support ticket because filling out the ticket automatically enrolls you in the "Witness Protection Program". Then mods & Staff start showing up at your house un-announced at 3am.

I went to the support site almost a week ago and put in a ticket to change my username because my friend changed it as a prank. Now I'm waiting for a reply and have no idea about their response time. I don't need any reply for the answer urgently, but I really want an estimated response time.
I think this rule should not be here and we should always be free to change our usernames!
