why do some players get more time

I don’t understand why sometimes at the end of a game the clock will just keep adding time for one of the players. Seems stupid. Is this some kind of setting I can turn off? 5 minutes should be just five minutes, not 5 minutes plus an indeterminable amount of time. Makes it hard to estimate how long the game will take and it affects the game’s outcome.

Because of material winning
If you play let's say 5minutes +5 seconds , at each move you get +5 seconds so , if you premove ( it only takes 0.1 seconds you remain for next move 4.9 seconds ) you get that too , not only your opponent. You should play 5 minutes+ 0 seconds that means it's a 5 minute game maximum
