It's Levy Rozman's (Gothamchess) favorite opening against 1. E4. His great friend Eric Rosen is considered the godfather of the Stafford Gambit. I think being the biggest modern chess streamer and how Caro Kann is great for anyone under 2000+ ELO has increased its popularity.

My opinion (not good but whatever) is that it doesn’t have as much theory as other e4 openings and isnt as risky as others (in most lines).

I tried to learn the sicilian first before realizing how much theory's involved and then I switched to the caro-kann because I heard it was a lot easier and a solid opening. (Also cause I watch Gotham)
