Evaluation bar and the best line

Hello!
I don't quite understand how does the evaluation bar work. Let me just show a couple of examples. In the first one the evaluation bar gives +5.50 after 19. Nf3 g6, but we see that the real engine evaluation (in the blue box) is just +4.24. In the second example, 11.f5 is considered as the best move with +1.40, but, again, from the lines in the blue box we see that 11... Bd7 is just not the best move here for black, and the real engine evaluation is +0.51 after 11... gxf5.

These are just two examples from my recent games, sometimes the difference between the "bar evaluation" and the real engine evaluation is much greater. I understand that the computer needs time to improve the analysis, but since the lines are already calculated (and shown in the blue box), why not to use them in the position evaluation?

 I could be wrong but the bar on the left may actually going to a different depth than what is shown on the right.

Hey, I'm sorry but I'm in the google chrome browser and I can't seem to find how to turn that on during live chess. I see so many people having that in game but it won't show up for me. Can you help me find how to turn it on?

You can't do it while playing games. Only in post-game analysis or while watching games.
