Is there a way in the iOS app to see past games against computer opponents? I played one of my best games against “Maria (1200)” but ultimately lost. I’d love to be able to revisit that game, rework the pivotal move that changed the course of the game and continue against her to see if I could win it. Generally it would be great to add a button to analysis mode for any game to play against one of the computer opponents of my choice.

No. There isn't.
However, they are just now testing the ability to save games against the computer in the beta website. You should join the beta and check it out.
