Go to your live chess page(via the "play" drop down menu) on the right of the page there will be a yellowish box in it is a "settings" link where those options can be found. As a side note I believe that even if you have the setting on "do not always queen on promotion" you will always queen on promotion anyways if you are in time trouble. ie: 30 seconds on the clock and no increment.

In online chess due to time available it's not necessary for a auto promote option. It's not practical so chess.com every time you promote, gives you the available menu to decide for.
What is totally aneccaptable is the time policy chess.com use for premium members against non premium. I understand the reasons behind when someone is really in need of it, but when he is present and deliberately avoid to play taking vacation time while he play moves in other games or chess.com gives him 24 hours extra time to think his next move, that is social racism.

I would like to change my promotion setting, each time one of my pawns reach the other side it changes to a Queen, I would like to change the setting like what it was before and to be abale to choose the promoted piece... does any one knows how?
