Can you read music?

I learned how to read music when I was a kid in music class, but I never had applied it much to my playing music other than a piano class.  I just bought a piano and am trying to learn some songs and am realizing that the sheet music in books is wrong.  I picked up a beatles songbook from the library and I know its not right.  Why is that?  Why doesn't the transcriber transcribe what the writer intended?  It seems to me that unless you palay classical you'd better have a good ear because your on your own.  Can anyone help me?
